Bacon Cornbread recipe

Preparation Time: 10 minutes | Cooking Time: 30 minutes

Squishy, soft and delicious cornbread, perfect for serving with chilli, stew or bolognese. This twist on the classic is made with chunks of smoked, crispy bacon - yum!


  • 125g plain flour
  • 125g cornmeal
  • 140g caster sugar
  • 3 tsp. baking powder
  • 1 tsp. salt
  • 150g smoky bacon
  • 1 egg
  • 225ml milk
  • 100ml vegetable oil


  1. Preheat oven to 200C and grease a round 9 inch cake tin.

  2. Fry bacon in a deep, frying pan until golden brown and crisp. Crumble into small chunks. In a bowl, whisk together the flour, cornmeal, sugar, baking powder and salt. In a jug, whisk the egg, milk and oil. Add the wet mix to the dry mix until you have a smooth batter. Fold in the bacon.

  3. Pour the batter into the prepared tin. Bake for 20-30 minutes or until golden and springy to the touch. A skewer inserted into the centre of the loaf should come out clean.

If you like, fold in some sweetcorn too - it will add a sweet, crunchy, fresh texture. Recipe serves 6.
