Baking is a bit of a fine art – so whilst these recipes contain exact cooking times and measurements, you also need to use a bit of common sense when baking. Keep an eye on your cupcakes whilst they are in the oven and if they look golden and cooked through before the recipe says so, take them out of the oven and do the skewer test – a skewer inserted into the centre of a cupcake should come out clean if the cupcakes are cooked. If the cupcakes aren't cooked by the time the recipe says they will be, keep them in the oven for a little longer and check on them every couple of minutes.

For your cupcake batter, in most cases, unsalted butter will be your best choice. And for your icing, especially if you're making buttercream, salted butter will be the best choice as it will add more flavour – but it all comes down to personal preference.
