Ice cream is a sweet treat that the whole family will enjoy, made with dairy products such as milk and cream, often combined with sugar, eggs and other flavours and fruits. Ice cream is often based on custard, although it can also be made with basic ingredients like condensed milk and whipping cream instead. To get the creamy, smooth texture of a classic ice cream, the mixture needs to be churned or stirred while being frozen to break down the ice crystals and incorporate air. You don't need an ice cream maker to create delicious ice cream at home, although it does help. All you need to do is pour the ice cream base, whether you're using custard or a less traditional mixture, into a freezer-proof container and pop into the freezer until firm, stirring really well halfway through the freezing time to break down the ice crystals. Heavier custards might need to be stirred more frequently or frozen for longer, but generally, you'll need to freeze for 3-4 hours, stirring at around 2 hours. Once firm, you can then keep the ice cream in the freezer until you're ready to use it - just make sure you get it out of the freezer for at least 15 minutes before serving so that it can soften up enough to scoop.
