Christmas pudding is given a super speed makeover with this recipe - the pud itself is made in about 15 minutes and you can microwave it, too, in just 10 minutes. Perfect if you forgot to make a Christmas pud.
- 600g luxury mincemeat
- 50g each self-raising flour and breadcrumbs
- 1 egg
- Zest of 1 lemon
- Zest of 1 orange
- 1 tsp. mixed spice
- 1/2 tsp. cinnamon
- 2 tbsp. brandy
Put the mincemeat into a large bowl and add the orange zest, lemon zest and brandy. Stir to combine.
Sift in the flour, cinnamon and spice and stir to combine. Stir in the breadcrumbs and add the beaten egg.
Pour into a greased 1 litre pudding basin. Cover loosely with greaseproof, then cook in the microwave on high for 8-10 minutes or until firm all the way through.
