Almond Custard recipe

Almond has a very distinctive marzipan flavour - and so it works very well with the creaminess of a custard. This custard is a brilliantly simple one, too - just mix all the ingredients together, then cook until thick.


  • 350ml water
  • 150g caster sugar
  • 60g skim milk powder
  • 2 tbsp. corn flour
  • 4 egg yolks
  • 1 tsp. almond extract


  1. Mix together milk powder, corn flour and sugar in a saucepan.

  2. In a jug, beat the egg yolks, then whisk in the water.

  3. Gradually add the water and eggs to the saucepan, stirring all the while, until smooth.

  4. Cook over a medium heat until thickened and smooth, around five minutes. Stir in the almond extract, remove from the heat and serve.

Use the extract of your choice - we like almond, but you could use anything you have to hand. This recipe serves 6.
