Almond has a very distinctive marzipan flavour - and so it works very well with the creaminess of a custard. This custard is a brilliantly simple one, too - just mix all the ingredients together, then cook until thick.
- 350ml water
- 150g caster sugar
- 60g skim milk powder
- 2 tbsp. corn flour
- 4 egg yolks
- 1 tsp. almond extract
Mix together milk powder, corn flour and sugar in a saucepan.
In a jug, beat the egg yolks, then whisk in the water.
Gradually add the water and eggs to the saucepan, stirring all the while, until smooth.
Cook over a medium heat until thickened and smooth, around five minutes. Stir in the almond extract, remove from the heat and serve.
