American-Style Buttermilk Pancakes recipe

American pancakes are thicker, fluffier and richer than ours - perfect for a weekend treat. They're easy to make too, and are particularly yummy drizzle with maple or golden syrup.


  • 150g plain flour
  • 1 tsp. baking powder
  • Pinch bicarbonate of soda
  • 1 egg
  • 3 tbsp. melted butter
  • 200ml buttermilk
  • 3 tbsp. caster sugar
  • Pinch salt
  • 3 tbsp. butter to fry


  1. Sift together plain flour, baking powder, bicarb, sugar and salt. Stir in the egg, melted butter and buttermilk to combine.

  2. To fry, heat the butter in a large frying pan over a medium high heat. Drop the batter by the 60ml (around 4 tbsp) onto the frying pan. Turn the heat down to medium and fry until bubbles appear on the surface of the pancake, then flip over and cook for another 1-2 minutes or until golden brown on both sides.

You can make these pancakes in advance, if you like - just warm them up by frying for 30 seconds on either side. Recipe makes 4 pancakes.
