Anchovy and Garlic Linguine recipe

This fast, healthy pasta dish is the perfect midweek dinner. Linguine is tossed with a quick anchovy and garlic sauce. It's not for the faint-hearted and has a super strong flavour - but if you love the salty flavour of anchovies, you'll love this dish.


  • 500g fresh linguine
  • 4 garlic cloves
  • Small handful freshly chopped parsley
  • 175g anchovy fillets, drained
  • 2 tbsp. oil


  1. Mince the garlic cloves. Bring a pot of salted water to the boil and add the pasta. Cook according to packet instructions.

  2. Heat oil in a frying pan. Add the garlic and fry until lightly golden. Add the anchovies and break them up a little with your spoon.

  3. Add a dash of the pasta water and stir well. Simmer until the sauce thickens slightly, adding more pasta water if needed. When the pasta is cooked, drain and add to the pan with the sauce. Toss to combine, then add parsley and toss again. Serve hot.

If you like, you could add some fresh veggies to the sauce - things like spinach, grilled courgettes and mushrooms would all be a good choice. Recipe serves 8.
