This very simple recipe, made with sardines, anchovies, butter, garlic and parsley is perfect for serving at a party alongside pieces of crusty bread or focaccia. Beware - this isn't one for those watching their weight!
- 100ml oil
- 50g garlic
- 2 x 50g tins anchovies, oil reserved
- 1 1/2 tins sardines, oil reserved, boned if needed
- 125g butter
- Small handful freshly chopped parsley
Mince garlic. Heat oil in a large frying pan and add garlic. Fry for 2-3 minutes or until golden. Stir in the anchovies, oil, sardines and oil, and butter. Cook, stirring often, until the anchovies and sardines are broken up and combined into the butter.
To serve, stir in the parsley and serve warm.
