These sweet cupcakes are flavoured with mashed bananas and grated apples, making them a fantastic cake to serve to children as they are packed with hidden fruits. Ice them with a thick cream cheese icing.
- 225g mashed ripe banana
- 2 apples, peeled, cored and grated
- 250g plain flour
- 1 tsp. each bicarbonate of soda and salt
- 1/2 tsp. each ground nutmeg and cinnamon
- 200g caster sugar
- 150g unsalted butter
- 2 eggs
- 1 tsp. vanilla extract
- 4 tbsp. buttermilk
Preheat the oven to 190C. Grease and flour 24 cupcake cases or put cases into a cupcake tin.
Beat together the butter and sugar until pale and fluffy using a wooden spoon. Beat in the eggs one at a time, adding a little flour if the mixture threatens to curdle. Stir in the vanilla and buttermilk.
Sift in the flour, bicarb, salt, nutmeg and cinnamon. Stir to combine. Fold in the bananas and apples. Divide the mixture between the prepared cupcake cases.
Place into the oven and bake for 20-25 minutes until they test done with a clear skewer.
