This gently spiced apple chutney makes a lovely change from the usual apple sauce. Serve it with roast pork and crackling for a delicious roast dinner or serve it with cheese and crackers for a light lunch.
- 1.5kg cooking apples
- 750g brown sugar
- 500g raisins
- 1 onion
- 750ml apple cider vinegar
- Salt and pepper
- 1 tsp. mustard powder
- 1 tsp. ground ginger
Peel, core and dice the apples. Finely chop the onion.
Combine the diced apples, sugar, raisins, onion, vinegar, salt, pepper, mustard powder and ground ginger in a large saucepan. Bring to the boil.
Reduce to a simmer and cook for 35-45 minutes until thick and syrupy. Leave to cool and then spoon into sterilised jars.
