Apple and Rhubarb Crumble recipe

This simple apple and rhubarb recipe is sure to be a firm favourite in your household as it's just so simple to make! Feel free to add the fruit of your choice or swap the rhubarb for another tart fruit like a blueberry. Serve it simply with some thick clotted cream or some cold vanilla ice cream.

Ingredients

  • 4 stalks of rhubarb
  • 1 sweet apple
  • 3 tbsp. caster sugar
  • 125g caster sugar
  • 100g plain flour
  • 60g oats
  • 60g butter
  • 30g mixed chopped nuts

Directions

  1. Peel, core and chop the apple into chunks. Thickly slice the rhubarb stalks.

  2. Preheat the oven to 200C.

  3. Place the rhubarb and apple into a baking dish and sprinkle with 3 tbsp. of caster sugar.

  4. Combine 125g sugar, 100g flour, 60g oats, 60g butter and 30g mixed chopped nuts in a large bowl and rub the ingredients together with your fingers until you have a crumbly mixture.

  5. Sprinkle the crumble topping over the fruit and place the crumble into the oven for 45 minutes or until the crumble is golden and the fruit is hot and bubbling.

Leave the crumble to cool for ten minutes or so before serving it. This recipe will yield around six servings.
