This thick, rich and glossy cherry compote is made even more tempting with the addition of red wine, cinnamon and cloves. The aromatic spices and flavours lend it well to Christmas and winter desserts, so think about spooning it over chocolate cakes or serving over warm pancakes through the winter for a warming treat.
- 2kg cherries
- 2 litres red wine (wine that you'd be happy to drink)
- 400g caster sugar
- Cinnamon sticks
Heat the red wine in a large saucepan and add the sugar. Stir and let the sugar dissolve into the wine without boiling.
Add the cherries, and heat until just turning soft. Put a cinnamon stick (or half if the jar is small) and a clove into each jar and pour the mix into the jars whilst still hot.
Seal and turn lid side down until cool. Leave to sit for a few weeks before serving.
