Tapas is a small dish that you serve alongside other small dishes as part of a starter - tapas dishes are sharing dishes. In this recipe, artichokes, figs and almonds are cooked with saffron and white wine vinegar. Serve with warm bread.
- 2kg baby artichokes, chokes removed
- 200g dried figs
- 200ml hot water
- Pinch of saffron strands
- 120ml extra-virgin olive oil
- 75g whole blanched almonds
- 75ml white wine vinegar
- Salt and pepper
- 1 tsp. smoked paprika
Place figs into a bowl with the water and the saffron. Leave to steep in the water for 5 minutes until plump. Remove from the bowl and halve. Reserve the water.
Halve the artichokes. Heat oil in a large heavy pan. Add the artichokes and toss to coat, then add the reserved water and salt and pepper. Cover and simmer until tender, around 8-9 minutes.
Add the steeped figs, almonds, vinegar and paprika. Cook until the liquid has evaporated. Season to taste to serve.
