Artichoke and Fig Tapas recipe

Preparation Time: 10 minutes | Cooking Time: 20 minutes

Tapas is a small dish that you serve alongside other small dishes as part of a starter - tapas dishes are sharing dishes. In this recipe, artichokes, figs and almonds are cooked with saffron and white wine vinegar. Serve with warm bread.


  • 2kg baby artichokes, chokes removed
  • 200g dried figs
  • 200ml hot water
  • Pinch of saffron strands
  • 120ml extra-virgin olive oil
  • 75g whole blanched almonds
  • 75ml white wine vinegar
  • Salt and pepper
  • 1 tsp. smoked paprika


  1. Place figs into a bowl with the water and the saffron. Leave to steep in the water for 5 minutes until plump. Remove from the bowl and halve. Reserve the water.

  2. Halve the artichokes. Heat oil in a large heavy pan. Add the artichokes and toss to coat, then add the reserved water and salt and pepper. Cover and simmer until tender, around 8-9 minutes.

  3. Add the steeped figs, almonds, vinegar and paprika. Cook until the liquid has evaporated. Season to taste to serve.

If you like your tapas a little spicier, add some chilli powder. Recipe serves 8.
