Artichoke Mashed Potatoes recipe

Preparation Time: 15 minutes | Cooking Time: 25 minutes

A great way to make mashed potatoes go a little bit further, this recipe combines cooked potatoes and artichoke hearts to create a creamy mashed potato with bags of punchy flavour.


  • 400g tin artichoke hearts in water, drained
  • 4 baking potatoes
  • 2 garlic cloves
  • 125ml milk
  • 50g butter
  • Salt and pepper


  1. Mince the garlic cloves. Halve the artichoke hearts. Place artichokes and garlic into a food processor with the milk and blitz until smooth.

  2. Dice the potatoes and place into a pan of cold salted water. Bring to the boil and cook for 15-20 minutes or until tender. Drain and place into a bowl. Mash the potatoes using a potato masher until soft and smooth. Add the artichoke mixture and mash until smooth.

  3. Beat the butter into the mash using a wooden spoon until completely melted, then season with salt and pepper to taste.

For extra flavour, add a little grated cheese to the mash. You could also add some parsley or a little olive oil. Recipe serves 4-6.
