A great way to make mashed potatoes go a little bit further, this recipe combines cooked potatoes and artichoke hearts to create a creamy mashed potato with bags of punchy flavour.
- 400g tin artichoke hearts in water, drained
- 4 baking potatoes
- 2 garlic cloves
- 125ml milk
- 50g butter
- Salt and pepper
Mince the garlic cloves. Halve the artichoke hearts. Place artichokes and garlic into a food processor with the milk and blitz until smooth.
Dice the potatoes and place into a pan of cold salted water. Bring to the boil and cook for 15-20 minutes or until tender. Drain and place into a bowl. Mash the potatoes using a potato masher until soft and smooth. Add the artichoke mixture and mash until smooth.
Beat the butter into the mash using a wooden spoon until completely melted, then season with salt and pepper to taste.
