This recipe is a really interesting way of serving fresh artichokes - tender and soft artichokes are dipping into a tangy, salty, savoury lemon dressing. This makes a yummy lunch or starter.
- 4 globe artichokes
- 50ml lemon juice
- 2 bay leaves
- 100ml extra-virgin olive oil
- 1 garlic clove
- 3 tbsp. lemon juice
- 3 tbsp. white wine vinegar
- Salt and pepper
Break the stems of the artichokes off and discard. Remove any fibrous bits and break off any discoloured leaves. Bring a pot of salted water to the boil.
Add the artichokes to the water, along with 50ml lemon juice and 2 bay leaves. Cover and simmer for 30 minutes or until tender. Remove and leave to cool.
Mince the garlic clove. Whisk the olive oil, lemon juice, vinegar, garlic, salt and pepper together. Serve the artichokes with the dressing.
