Quesadillas are a sort of "tortilla sandwich". Soft and squishy on the inside and lovely and crisp on the outside, they are perfect for family meals or for a relaxed dinner. If desired, add a little ham or some grilled chicken for extra flavour.
- 2 large flour tortillas
- 2 tbsp. oil
- 250g asparagus
- 150g goat's cheese, soft
- Small handful freshly chopped coriander
- Salt and pepper
Snap the woody ends of of the asparagus spears then slice the spears into quarters. Heat 1 tbsp. oil in a frying pan. Add the asparagus, season with salt and pepper. Fry until tender and lightly browned.
Meanwhile, spread each tortilla with 1/2 the goat's cheese, like you're spreading a pizza base with tomato sauce. Arrange half the asparagus spears over half of each of the tortillas. Season with salt and pepper and sprinkle with coriander. Fold the tortillas in half to enclose the filling.
Heat the rest of the oil in a clean frying pan. Add the quesadillas and fry for 3-4 minutes on either side until golden and crisp.
