Bright green, creamy and packed with zingy lime flavour, this avocado icing is the perfect topping for plain vanilla or lemon cupcakes or round cakes.
- 2 avocados
- 450g icing sugar
- 2 tbsp. lime juice
- 1 tsp. vanilla extract
Slice the avocadoes in half, remove the stone and carefully scoop out the flesh with a spoon. Dice.
Mash the avocado or use a hand blender until it's completely smooth. Mix with the lime juice and vanilla extract and then gradually mix in the icing sugar until the icing comes together.
