Avocado Icing recipe

Preparation Time: 20 minutes

Bright green, creamy and packed with zingy lime flavour, this avocado icing is the perfect topping for plain vanilla or lemon cupcakes or round cakes.


  • 2 avocados
  • 450g icing sugar
  • 2 tbsp. lime juice
  • 1 tsp. vanilla extract


  1. Slice the avocadoes in half, remove the stone and carefully scoop out the flesh with a spoon. Dice.

  2. Mash the avocado or use a hand blender until it's completely smooth. Mix with the lime juice and vanilla extract and then gradually mix in the icing sugar until the icing comes together.

For an extra green icing, add a couple of drops of green food colouring. Recipe makes enough to cover 24 cupcakes.
