These fudgy chocolate brownies have one very special secret ingredient - avocado! They're made rich and dense with wholemeal flour and dark brown sugar, as well as vegetable oil. We've made them with pecans, walnuts and chocolate chips, but you could use whichever nuts you like.
- 100g ground almonds
- 100g each caster sugar and dark brown sugar
- 120ml vegetable oil
- 120g dark chocolate chips
- 65g wholemeal flour
- 1 avocado
- 45g cocoa powder
- 6 eggs
- 1/2 tsp. salt
- 50g each pecans and walnuts
Preheat the oven to 180C and line and grade a baking tin.
Whisk together the flour, salt, cocoa powder and almonds. Halve the avocado, remove the stone and scoop out the flesh. In a bowl, mash the avocado with the oil, caster sugar, brown sugar and eggs until as smooth as possible. Pour the dry mix into the wet mix and fold until just combined with a wooden spoon. Fold in the pecans and walnuts.
Pour the brownie batter into the prepared baking tin and bake for 30-40 minutes or until just set. Serve warm or cool in the tin before slicing.
