This retro dish of avocados, halved and topped with sweet prawns in a rich Marie Rose dressing - but this is a dressing with a fun twist, made with vodka, hot sauce and Worcestershire sauce.
- 2 avocados
- 250g small peeled prawns, cooked, deveined
- 4 tbsp. mayonnaise
- 2 tbsp. ketchup
- 1 1/2 tbsp. vodka
- Dash each of Worcestershire sauce and hot sauce
- 1 tsp. minced horseradish
- Small handful freshly chopped coriander
Slice the avocados in half and remove the stones.
Mix the mayo, ketchup, vodka, Worcestershire sauce, hot sauce, horseradish and coriander with salt and pepper. Add the prawns and stir to coat.
To serve, pile the prawns into the hollowed avocados.
