In this yummy lunchtime recipe, roasted broccoli, fried bacon and red onion are served with rocket, spinach, chopped cucumber and a simply creamy dressing. Delicious!
- 1 broccoli head
- 225g bacon, smoked
- 1 small red onion
- 2 tbsp. olive oil
- 2 tbsp. lemon juice
- Salt and pepper
- 6 tbsp. mayonnaise
- 2 tbsp. extra-virgin olive oil
- 3 tbsp. white wine vinegar
- 100g each rocket, spinach and cucumber
Chop the broccoli into florets. Dice the bacon. Thinly slice the red onion. Chop the cucumber into dice and remove the seeds.
Toss the broccoli with olive oil, lemon juice and salt and pepper. Bake in a 180C oven for 15-20 minutes or until golden brown and crisp. Meanwhile, fry the bacon until golden and crisp. To serve, arrange the broccoli, bacon and cucumber over the rocket and spinach.
Whisk together the mayo, extra-virgin olive oil, vinegar, salt and pepper. Drizzle over the salad.
