In this yummy, simple recipe, perfect for the whole family, chicken breast filled are seasoned, sprinkled with garlic and mushroom and served with a meaty, creamy sauce. Serve with roast potatoes and broccoli.
- 2 chicken breast fillets, skin on, bone in
- 4 rashers streaky bacon
- 4 tbsp. double cream
- 1 garlic clove
- Salt and pepper
- 4 mushrooms
Thinly slice the mushrooms and crush the garlic clove. Butter a baking dish. Lay the chicken into the dish, skin side down, and sprinkle with garlic, salt and pepper. Flip and season. Lay two slices of bacon onto each, then sprinkle with the sliced mushrooms.
Place the dish into a 180C preheated oven and bake for 45-60 minutes, or until the chicken is cooked through and the juices run clear.
Lift out chicken and mushrooms. Pour juices into a saucepan, whisk in the cream and heat over a low heat until lightly thickened. Pour over the chicken to serve.
