Bacon and Tarragon Cabbage Salad recipe

Preparation Time: 15 minutes | Cooking Time: 20 minutes

In this easy peasy recipe, onion, garlic and bacon are fried until golden and tender, then simmered with cabbage, vinegar and a healthy handful of fresh tarragon. Serve with cooked meats and some roasted potatoes, or as it is for lunch.

Ingredients

  • 225g bacon
  • 1 medium cabbage
  • 1 onion
  • 1 garlic clove
  • 125ml white wine vinegar
  • Small handful freshly chopped tarragon
  • 1 tbsp. oil

Directions

  1. Dice the bacon and onion and mince the garlic clove. Shred the cabbage leaves.

  2. Heat oil in a large saucepan. Fry the bacon until golden and crisp, then remove with a slotted spoon. Add the onion and garlic and fry for 10 minutes or until golden and translucent.

  3. Add the cabbage, vinegar, tarragon and bacon and bring to a simmer. Cook for 1-2 minutes, or until the cabbage is wilted.

You can use different vinegar for this if you like - red wine, balsamic and apple cider would all be delicious. Recipe serves 8.
