In this easy peasy recipe, onion, garlic and bacon are fried until golden and tender, then simmered with cabbage, vinegar and a healthy handful of fresh tarragon. Serve with cooked meats and some roasted potatoes, or as it is for lunch.
- 225g bacon
- 1 medium cabbage
- 1 onion
- 1 garlic clove
- 125ml white wine vinegar
- Small handful freshly chopped tarragon
- 1 tbsp. oil
Dice the bacon and onion and mince the garlic clove. Shred the cabbage leaves.
Heat oil in a large saucepan. Fry the bacon until golden and crisp, then remove with a slotted spoon. Add the onion and garlic and fry for 10 minutes or until golden and translucent.
Add the cabbage, vinegar, tarragon and bacon and bring to a simmer. Cook for 1-2 minutes, or until the cabbage is wilted.
