Baked Ham and Egg Avocados recipe

This slightly strange but incredibly delicious baked dish is ideal for serving with things like sweet potato wedges or potato wedges, or your favourite vegetable main. Avocados are hollowed out and baked with a topping of ham and fresh eggs until set.


  • 2 avocados
  • 2 eggs
  • 2 slices of smoked ham
  • Salt and pepper


  1. Halve the avocados and remove the stones. Hollow out the centre a little bit so that there is about an inch left of the avocado on the skin. Use the rest of the avocado in a salad.

  2. Roughly chop the ham and sprinkle into the avocado hollows. Carefully crack the egg into each hollow, sprinkle with salt and pepper and bake in a 180C oven until set.

For a little spice, sprinkle the eggs with some cayenne pepper. Recipe serves 4.
