Sprouts are baked with salt and pepper in an oven until tender and delicious, then served with a delicious orange scented and hazelnut butter. Delicious!
- 1kg Brussels sprouts
- 100g butter
- Zest and juice of 1 orange
- 75g chopped toasted hazelnuts
- Salt and black pepper
- 1 tbsp. oil
Halve the sprouts and coat them in oil and sprinkle with salt and pepper. Bake in a 180C oven under a tent of foil for 35-45 minutes or until fork tender.
Beat the butter until soft. Stir in the orange zest and juice and season with black pepper. Fold in the toasted hazelnuts. Turn out onto a sheet of cling film, roll into a sausage shape and twist the ends. Put into the fridge until you're ready to use.
To serve, slice the butter and place over the sprouts. Pop back into the oven for a couple of minutes to let the butter melt and stir really well to coat the sprouts in the butter.
