Just 4 ingredients combine to make this delicious strawberry jam flavoured with balsamic richness for a hint of slightly sour sweetness. Serve with pancakes or over ice cream for a tasty pud.
- 500g strawberries, hulled and sliced
- 400g sugar
- 125ml good quality balsamic vinegar
- Thyme sprigs
Bring sugar and vinegar to the boil and cook until the sugar dissolves.
Add the sliced strawberries and thyme sprigs. Bring to the boil, reduce to a simmer and cook for 15-20 minutes or until thick. Remove thyme, then spoon into sterilised jars and seal.
