Banana Blueberry Muffins recipe

Sweet banana and slightly tart blueberries gives these oaty muffins a lovely flavour. Perfect for breakfast, or you could ice them with a blueberry frosting to turn them into a sweet pud.


  • 300g self-raising flour
  • 100g light muscovado sugar
  • 50g porridge oats
  • 1 tsp. bicarbonate of soda
  • 2 bananas, ripe, mashed
  • 285g buttermilk
  • 5 tbsp. olive oil
  • 2 egg whites
  • 150g blueberries
  • 1 tbsp. oats + 1 tbsp. sugar


  1. Combine flour, oats and bicarb. Make a well in the centre. Mash together bananas, buttermilk and oil and beat in the egg whites, then pour into the dry ingredients and stir until just combined. Fold in the blueberries.

  2. Divide between a lined 12-hole muffin tin. Sprinkle with oats and sugar, then bake for 18-20 minutes at 160C or until light golden and risen and crisp on top. Cool on a wire rack.

If you like, use dried blueberries for a slightly sourer muffin. Recipe makes 12.
