Banana bread and chocolate chips combine in this delicious recipe - a nifty way to use up ripe bananas and a brilliant way to get more fruit into your kids!
- 275g self-raising flour
- 2 ripe bananas, mashed
- 100g caster sugar
- 2 eggs
- 2 tbsp. cocoa powder
- 1/2 tsp. salt
- 250ml milk
- 150g butter, melted, lightly cooled
- 130g chocolate chips
Preheat the oven to 180C and grease or line a 12-hole muffin tin.
Sift together the flour, cocoa and salt. Beat the eggs and sugar until pale and fluffy, then whisk in the milk and melted butter. Stir in the mashed bananas.
Sift the flour mix into the wet mix, then stir until just combined. Fold in the chocolate chips and divide between the muffin liners. Bake at around 20 minutes or until tested done with a skewer.
