Banana Cinnamon Roll Ups recipe

Traditional cinnamon buns are given a makeover in this fabulous recipe, using bananas, apricots and orange zest for freshness. They're particularly yummy warm but are also fab at room temperature for breakfast.

Ingredients

  • 225g each strong white and granary flour
  • 1 tsp. each salt and sugar
  • 7g easy blend yeast
  • 150ml warm milk
  • 1 egg
  • 1 tbsp. oil
  • 150ml warm water
  • 4 bananas, peeled, sliced
  • 200g chopped dried apricots
  • 100g light brown sugar
  • 2 tsp. ground cinnamon
  • Zest 1 orange
  • Melted butter

Directions

  1. Mix the flours and salt in a bowl, then stir in the sugar and yeast. Make a well in the centre and pour in the milk, egg, oil and enough of the water to make a soft dough. Knead for 10 minutes or until smooth, place into an oiled bowl, then cover with oiled cling and leave to rise for an hour or until doubled in size.

  2. Grease two baking trays. Halve the dough and roll into two rough 30 x 25 cm rectangles. Brush with butter. Thinly slice bananas into a bowl and add the apricots, sugar, cinnamon and orange zest, then spread half evenly over each rectangle. Roll each rectangle up, tucking in any banana as you go, and slice each roll into 9. Place cut side up onto the baking trays, so that they just touch each other.

  3. Cover each tray with oiled cling and leave to rise for 30 minutes. Remove cling and bake rolls at 180C for 25 minutes or until golden and risen. Cool on a wire rack before pulling into rolls.

If you like, omit the apricots and orange zest and add chocolate chips instead. Recipe makes 18 rolls.
