Banana Muffins with a Cinnamon Crumb Topping recipe

Bananas are mashed into a classic muffin batter in this recipe, then topped with a brown sugar and butter cinnamon crumb topping for a bit of crunch.


  • 200g plain flour
  • 150g caster sugar
  • 3 ripe bananas, mashed
  • 75g butter, melted
  • 1 egg
  • 1 tsp. bicarbonate of soda
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 75g brown sugar
  • 2 tbsp. plain flour
  • 1 tbsp. butter
  • 1/8 tsp. ground cinnamon


  1. Preheat the oven to 190C and grease and line a 12-hole muffin tin.

  2. Beat together the caster sugar, bananas, butter and egg. In another bowl, combine the flour, bicarb, baking powder and salt. Add the wet mix to the dry mix and stir until just combined. Divide between the muffin liners.

  3. Rub together brown sugar, plain flour, butter and ground cinnamon. Sprinkle evenly over the top of the muffins, then bake for 18-20 minutes or until a skewer inserted into the centre comes out clean.

If you like, use a little nutmeg or mixed spice in place of the cinnamon. Recipe makes 12.
