This easy peasy banana cake is studded with walnuts and topped with a super simple orange glace icing, perfect for feeding a crowd.
- 250g self-raising flour
- 2 large very ripe bananas, mashed
- 1 tsp. baking powder
- 4 tbsp. light brown sugar
- 6 tbsp. each veg oil and milk
- 2 eggs
- 120g walnuts, chopped
- 100g icing sugar
- 1 tbsp. orange juice
Preheat the oven to 180C and grease an 18cm cake tin.
Mash together the bananas, sugar and oil. Sift in the flour and baking powder and stir to combine, then add the milk to loosen and fold in the walnuts. Pour into the cake tin and bake for 50-55 minutes or until a skewer inserted into the centre of the cake comes out clean.
Leave the cake to cool on a wire rack. Mix the icing sugar with orange juice until running, then drizzle all over the top of the cake.
