Bananas add sweetness to a simple pancake batter, served with salty bacon and sweet gooey maple syrup. These are pancakes you'll never forget!
- 140g self-raising flour
- 2 tbsp. brown sugar
- 1 tsp. baking powder
- 2 ripe bananas, one mashed, one sliced
- 2 large eggs
- 25g butter, melted
- 125ml milk
- 8 rashers streaky smoked bacon
- Maple syrup
Mix together the flour, sugar and baking powder. Make a well in the centre and add the eggs, butter and milk. Stir to combine until smooth, then mash in the banana.
Heat a little extra butter in a frying pan and once sizzling pour a ladle of batter into the pan. Layer 2-3 slices of banana on top of the pancakes, then flip. Fry for another 1-2 minutes.
Meanwhile, fry the bacon until crisp. Serve on top of the pancakes and drizzle with maple to serve.
