Banana Squares with Cream Cheese Icing recipe

Moist banana squares are topped with a rich and creamy cream cheese icing in this recipe - a delicious traybake that's perfect for feeding a crowd.


  • 225g mashed banana
  • 300g caster sugar
  • 250ml soured cream
  • 250g plain flour
  • 125g butter
  • 2 eggs
  • 1 tsp. vanilla extract
  • 1 tsp. bicarbonate of soda
  • 1/4 tsp. salt
  • 200g cream cheese
  • 4 tbsp. butter
  • 125g icing sugar
  • 1/2 tsp. vanilla extract
  • Pinch of ground cinnamon


  1. Preheat oven to 180C and lightly grease a swiss roll tin or tin of similar size.

  2. Beat together sugar and butter until pale and fluffy, then beat in the eggs one at a time. Stir in the vanilla and soured cream, then sift in the flour, bicarb and salt and stir to combine. Fold in the banana and spread evenly in the tin.

  3. Bake for 20-25 minutes or until a skewer inserted into the centre of the cake comes out clean. Cool in the tin on a wire rack.

  4. To make the icing, beat together the cream cheese and butter together until well combined and softened, then sift in the icing sugar and stir to combine. Stir in the vanilla and cinnamon, then spread onto the cake. Cut into slices to serve.

If you like, garnish the cake with some slithers of banana chips and finely chopped walnuts. Recipe makes around 12 portions.
