White chocolate chips give these banana muffins a wonderfully sweet flavour. If you like, you can use a combination of white choc and dark choc chips.
- 225g plain flour
- 100g caster sugar
- 250g mashed banana
- 4 tbsp. each veg oil and milk
- 1 egg
- 85g white chocolate chips
- 1/2 tsp. salt
- 1 tbsp. baking powder
Mash together the banana, sugar, egg and veg oil. Sift in the flour, salt and baking powder and stir to combine. Stir in the milk, then fold in the chocolate chips.
Line a 12-hole muffin tin and divide the batter between the liners. Bake for 20-25 minutes at 200C or until lightly risen and golden.
