One of the simplest ways to cook and prepare scallops, this recipe combines the classic flavours of olive oil, lemon juice, basil leaves, and garlic with scallops. Use the freshest scallops you can find.
- 20 scallops, cleaned, rinsed and patted dry
- 1 garlic clove
- 1 bunch fresh basil, finely chopped
- 1 tbsp. olive oil
- 1 lemon
- Salt and pepper
Heat the oil in a frying pan. Mince the garlic clove. Cook the garlic clove and basil together for 30 seconds over a medium heat, then add the scallops.
Season the scallops well and then squeeze the lemon juice over. Cook them for 2 minutes or so, turning at least once during cooking.
