BBQ Venison Ribs recipe

Preparation Time: 10 minutes | Cooking Time: 4 hours

A wonderfully gamey alternative to beef or pork ribs, in this recipe, ribs are simmered, then slathered in BBQ sauce and baked in the oven until tender.


  • 1.8kg venison ribs
  • 2 bay leaves
  • 1 onion
  • 1 celery stalk
  • 1 tbsp. each butter and oil
  • 500g ketchup
  • 475ml water
  • 125ml white wine vinegar
  • Juice of 1 lemon
  • 4 tbsp. Worcestersire sauce
  • 2 tbsp. brown sugar
  • 2 tbsp. treacle
  • 1 tsp. each chilli powder, black pepper and salt


  1. Bring a pot of salted water to the boil. Add the venison and bay leaves. Bring to the boil, reduce to a simmer and cook for 2 hours.

  2. Meanwhile, make the sauce. Dice the onion and celery stalk. Heat oil and butter in a large saucepan and fry the onion and celery stalk until tender, around 10 minutes. Add ketchup, water, vinegar, lemon juice, Worcestershire sauce, brown sugar, treacle, chilli powder, black pepper and salt. Cover and simmer for 2 hours over a very low heat.

  3. Preheat oven to 120C. Drain ribs and place into a roasting tin. Cover with the sauce and bake for 2 hours, basting every half an hour.

If you like, you can use this same sauce for venison steaks - they don't need to be marinated, and you can just pop them into the oven with the sauce sprinkled on top. Recipe serves 8.
