Beef Sushi Stir Fry recipe

Preparation Time: 20 minutes | Cooking Time: 30 minutes

Using sushi rice in your main meal makes for a filling, nutritious and delicious dinner. It's sticky, and it soaks up flavours really well - so serve it with plenty of sweet chilli sauce.

Ingredients

  • 140g short-grain white rice
  • 250g lean steak
  • 1 courgette
  • 1 carrot
  • 2 spring onions
  • 2 eggs
  • 1 garlic clove
  • 1 tbsp. soy sauce
  • 2 tbsp. sesame oil
  • 1 tsp. caster sugar
  • Sweet chilli sauce to taste

Directions

  1. Thinly slice the courgette and carrot into thin matchsticks. Thinly slice the spring onions on the diagonal. Beat the eggs. Mince the garlic clove. Thinly slice the steak.

  2. Place the rice into a pan and cover with water. Bring to the boil, reduce to a simmer and cook for 15 minutes or until tender. Drain and leave to sit for a while.

  3. Combine the steak in a bowl with the garlic, soy sauce, caster sugar and some salt and pepper to taste. Leave to sit for ten minutes. In a frying pan, heat the oil and fry the beef until nearly cooked to your taste. Add the carrot, courgette and spring onions. Fry for another 1 minute, then tip in the eggs and cook, stir frying them until golden. Add the rice and stir to combine, then fry for another minute or so to heat the rice.

  4. Serve drizzled with chilli sauce to taste.

If you like, add a chilli to the vegetables when you start to cook them - this will give the dish plenty of bite and a little sweetness. Recipe serves 2.
