Delicious smoked mackerel combines beautifully with sweet beetroot, spiky horseradish and crisp, crunchy salad leaves in this simple yet very effective salad recipe. Serve for lunch, or as a dinner party starter.
- 350g smoked mackerel fillets, skin removed
- 400g cooked beetroot
- 1 x 400g tin cannellini or butter beans
- 1/4 cucumber
- 100g fresh salad greens
- 1 red onion
- 200g fromage frais
- 2 tsp. horseradish sauce or prepared horseradish
- Zest and juice of 1 lime
Thinly slice the cucumber and red onion. Dice the beetroot. Mix together the fromage frais, horseradish, lime zest and half the lime juice.
Toss together the salad greens, red onion and lime juice. Add the flaked mackerel, beans and beetroot to the horseradish mix and stir gently to mix. Spoon over the salad greens to serve.
