Bored of apple sauce? Serve this delicious beetroot and pear sauce instead - it's rich, sweet, well flavoured and buttery and works wonderfully well with roast beef and pork.
- 3 beetroot
- 125g butter
- 1 small onion
- 2 small pears
- 1 tbsp. caster sugar
- 2 tbsp. white wine vinegar
- Pinch salt and pepper
Finely dice the onion. Peel, core and finely dice the pears. Preheat the oven and put the beetroots into a roasting tin. Cover with foil and roast at 200C for an hour or until tender. Leave to cool and then peel and finely dice.
Melt butter in a large saucepan. Add the onion, pears, sugar and vinegar and cook for 20 minutes or until the onion and pears are softened.
Add the beetroot and salt and pepper to the pan. Stir to combine, then blend everything using a hand blender. Serve warm, or chill for an hour before serving.
