Black bananas are used in this recipe for a delicious vanilla-flavoured tea cake. If you're not ready to make banana cake, pop your black bananas into the freezer and then just defrost them when you're ready.
- 185g caster sugar
- 125g butter
- 180g self-raising flour
- 1 1/2 tsp. vanilla extract
- 2 large black bananas, flesh mashed
- 1 egg
- 1/4 tsp. bicarbonate of soda
- 100ml milk
Preheat the oven to 180C and grease a small loaf tin.
Beat the butter and sugar together until pale and creamy, then beat in the vanilla. Beat in the egg, then mash in the bananas. Sift in the flour and bicarb and stir to combine, then stir in the milk. Pour the batter into the loaf tin, then bake for 45 minutes or until a skewer inserted into the centre of the cake comes out clean.
