Preparation Time: 15 minutes | Cooking Time: 20 minutes

Black walnuts are really tasty and this nifty recipe for black walnut shortbread is a brilliant way to use them. Can't find black walnuts? Use regular walnuts instead.

  • 225g butter
  • 125g icing sugar
  • 250g plain flour
  • 3 tbsp. brandy
  • 1 tbsp. vanilla
  • 120g black walnuts, chopped
  • 1/4 tsp. salt

  1. Cream together the butter and icing sugar until pale and fluffy. Stir in the brandy and vanilla, then sift in the flour and salt and stir to combine. Fold in the walnuts. Form the dough into rough 1-inch balls.

  2. Place balls 5cm apart on a few baking trays, then bake at 170C for 20 minutes, or until lightly golden and crisp. Serve slightly warm from the oven or leave to cool on a wire rack.

These biscuits keep really well - just pop them into an airtight box or biscuit barrel. Recipe makes around 40 biscuits.
