Blackened Swordfish recipe

Preparation Time: 10 minutes | Cooking Time: 10 minutes

Swordfish is coated in a dried herb and spice blend in this simple recipe, before being grilled until charred and blackened. Maximum flavour for minimum effort.


  • 4 swordfish steaks
  • 2 tbsp. paprika
  • 1 tbsp. garlic granules
  • 1 tbsp. onion granules
  • 1 tsp. cayenne pepper
  • 1 tsp. dried oregano
  • 1 tsp. dried thyme
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 1/2 tbsp. oil


  1. Mix the paprika, garlic, onion, cayenne, oregano, thyme, salt and pepper in a bowl. Add the oil and stir to make a paste. Coat the fish steaks in the paste.

  2. Heat a griddle pan over a medium high heat. Grill for 3-5 minutes on either side. The fish will sizzle and smoke and will stick to the pan, so make sure that you let it seal before turning it.

Like things spicy? Add some chilli powder to the herb and spice mix. Recipe serves 4.
