Blueberry Buckle recipe

Preparation Time: 25 minutes | Cooking Time: 30 minutes

Blueberry buckle is a type of blueberry cake, topped with a crunchy combination of sugar, butter and cinnamon. It's a little like a cobbler and a little like a crumble, with a moist, blueberry rich underlayer and crunchy top.


  • 300g blueberries
  • 150g caster sugar
  • 60g butter
  • 1 egg
  • 120ml milk
  • 250g plain flour
  • 1 tsp. baking powder
  • Pinch of salt
  • 100g caster sugar
  • 50g butter
  • 5 tbsp. plain flour
  • Pinch ground cinnamon


  1. Preheat oven to 190C and grease a 20cm square tin. Cream the butter and sugar together until pale and fluffy, then beat in the egg. Sift together the flour, baking powder and salt and stir into the egg and sugar mix, alternating with milk. Once combined, fold in the blueberries.

  2. Spoon mix into the prepared tin. Stir sugar, flour and cinnamon together, rub in the butter until the mix forms fine breadcrumbs then sprinkle evenly over the cake batter. Bake for 25-30 minutes or until golden and crunchy on top.

If you like, add some raspberries to the cake for a little extra colour and flavour. Recipe serves 6.
