Blueberry Crumble recipe

Preparation Time: 20 minutes | Cooking Time: 45 minutes

Sweet blueberries are cooked with brown sugar and lemon zest and topped with an oaty, buttery, lightly spiced crumble topping. Delicious after a Sunday dinner. Serve with plenty of custard or cold vanilla ice cream.

  • 1kg blueberries, washed
  • 50g brown soft sugar
  • Zest of 1/2 lemon
  • 100g plain flour
  • 175g brown soft sugar
  • 90g butter, cubed
  • 50g porridge oats
  • Pinch salt
  • Pinch nutmeg
  • 1/4 tsp. ground cinnamon

  1. Preheat oven to 180C. Toss blueberries, zest and sugar in a bowl and spread in the bottom of an oven dish.

  2. Stir together flour, sugar, porridge oats, salt, nutmeg and cinnamon. Add the cubed butter. Rub with your fingertips until the mix resembles coarse breadcrumbs. Spread evenly over the blueberries. Bake at 190C for 40-45 minutes or until lightly golden and bubbling round the edges.

You can use fresh or frozen blueberries - if you use frozen, sprinkle a little plain flour into the bottom of the baking dish to soak up some of the juices. Recipe serves 6.
