Blueberry Muffins with Cinnamon Crumble Topping recipe

Blueberry muffins are given a little va-va-voom with this easy yet very effective recipe with a deliciously simple cinnamon crumble topping. Yum!


  • 200g plain flour
  • 150g caster sugar
  • 150g blueberries
  • 75ml veg oil
  • 75ml milk
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 egg
  • 100g caster sugar
  • 50g plain flour
  • 50g butter
  • 1 tsp. cinnamon


  1. Preheat oven to 200C and line a muffin tin with 12 paper liners.

  2. Beat veg oil, milk and egg together. Sift together flour, baking powder and salt, then whisk in the sugar. Gradually add the wet mix to the dry mix and stir until just combined. Fold in the blueberries.

  3. Divide the batter between the muffin liners. Make the topping by tossing sugar, flour and cinnamon together. Rub the butter in until the mix resembles fine breadcrumbs then sprinkle evenly over the muffin batter.

  4. Bake for 20-25 minutes or until just risen and the topping golden.

If you're not a fan of cinnamon, leave it out and add some porridge oats instead. Recipe makes 12 muffins.
