Blueberry Orange Cobbler recipe

Blueberries, orange juice and zest take centre stage in this blueberry cobbler recipe. It's like a cross between a crumble and a cake and is equally as delicious.


  • 425g blueberries
  • 4 tbsp. caster sugar
  • 4 tbsp. orange juice
  • 110g butter
  • 100g caster sugar
  • 85g plain flour
  • 1/4 tsp. salt
  • 1/4 tsp. baking powder
  • 1 egg
  • 1 tsp. vanilla extract
  • Zest of 1/2 an orange


  1. Combine blueberries, caster sugar and orange juice. Tip into a buttered 20cmx20cm baking dish and level.

  2. Cream butter and sugar together until pale and fluffy. Beat in the egg, then beat in the vanilla. Sift in the flour, salt and baking powder in, then stir to combine. Fold in the orange juice. Dollop onto the blueberry mix, trying to make sure that most of the blueberries are coloured.

  3. Bake at 190C for 35-40 minutes or until the topping is cooked through and the blueberries bubbling.

If you prefer, replace the orange juice and zest with lemon - or add a dash of orange liquor. Recipe serves 6.
