Low Fat Apple Bran Muffins recipe

These muffins are fantastic for people who have trouble with indigestion. They're also really quite healthy and are great as a treat in kid’s lunchboxes. They're sweetened with brown sugar and they are raised with the aid of egg whites. To make them extra healthy, use wholemeal flour, but this recipe uses plain flour.

Ingredients

  • 225ml buttermilk
  • 100g plain flour
  • 75g wheat bran
  • 4 tbsp. dark brown sugar
  • 2 egg whites
  • 1 tsp. baking powder
  • 1 apple

Directions

  1. In a small bowl, combine the bran and buttermilk. Set them to one side for ten minutes.

  2. Preheat the oven to 180C and prepare a muffin tin with muffin cases.

  3. Mix together the flour, sugar and baking powder. Peel, core and grate the apple.

  4. Stir the bran mixture and egg whites into the flour and sugar mixture.

  5. Fold the grated apple into the batter and then spoon it into paper cases.

  6. Cook the muffins for 15-20 minutes or until they test done when a skewer inserted into the muffin comes out clean.

Leave them to cool completely before serving. Store them in an airtight container and they will last for up to a week. This recipe makes around 12 muffins.
