- 225ml buttermilk
- 100g plain flour
- 75g wheat bran
- 4 tbsp. dark brown sugar
- 2 egg whites
- 1 tsp. baking powder
- 1 apple
In a small bowl, combine the bran and buttermilk. Set them to one side for ten minutes.
Preheat the oven to 180C and prepare a muffin tin with muffin cases.
Mix together the flour, sugar and baking powder. Peel, core and grate the apple.
Stir the bran mixture and egg whites into the flour and sugar mixture.
Fold the grated apple into the batter and then spoon it into paper cases.
Cook the muffins for 15-20 minutes or until they test done when a skewer inserted into the muffin comes out clean.
