These gorgeous cheesy bites are the perfect party nibbles - they're gluten free, too. Serve them warm from the oven with some salsa.
- 500g tapioca flour
- 250g grated parmesan cheese
- 2 eggs
- 300ml milk
- 150ml vegetable oil
- 1 1/2 tsp. salt
Preheat oven to 180C and grease and flour a baking sheet.
Put the milk, oil and salt into a saucepan and bring to the boil. Once it comes to the boil, add all of the tapioca flour. Stir constantly until the dough pulls away from the sides of the pan.
Let the dough cool, then beat in the eggs one at a time. Stir in the cheese. Grease your hands and roll the dough into small balls. Bake for 25 minutes and serve warm.
