Brazilian Coconut Chicken Curry recipe

Preparation Time: 10 minutes | Cooking Time: 30 minutes

This slightly sweet, rich and wonderfully creamy curry has all of the enticing flavours of Brazil. Perfect with rice or soft bread.


  • 1 tsp. each cumin, cayenne, turmeric and ground coriander seed
  • 2 tbsp. oil
  • 4 chicken breasts
  • Salt and pepper
  • 1 onion, chopped
  • 3 tomatoes, seeds removed, chopped
  • 1 tbsp. minced ginger
  • 2 garlic cloves, crushed
  • 2 green chillies, seeded and chopped
  • 400ml coconut milk
  • Salt and pepper
  • Small handful freshly chopped coriander


  1. Season the chicken, then combine cumin, cayenne, turmeric and ground coriander seed and sprinkle evenly all over the chicken.

  2. Heat half the oil in a frying pan and cook the chicken until browned on all sides. Take out of the pan, add the rest of the oil, then add the onion, ginger, garlic, chilli and tomatoes. Cook gently until softened and sweet, then add the coconut milk and simmer for 8 minutes or so. Add the chicken, and cook until no longer pink in the middle.

Sprinkle the curry with fresh coriander right before serving. Recipe serves 4.
