Banana bread is a real classic treat. This version uses just a few ingredients and is very simple to make. Serve warm spread with butter, or cool the next day with a cup of tea.
- 260g plain flour
- 1 tsp. baking powder
- 1/2 tsp. bicarbonate of soda
- 150g caster sugar
- 3 tbsp. veg oil
- 2 eggs
- 2 bananas, peeled, halved
Place flour, baking powder, bicarb, caster sugar, veg oil, eggs and bananas into the bread machine. Select the Dough setting, press start, then run until the banana is well mashed and everything is well combined, around 3-5 minutes.
Smooth out the dough with a rubber spatula, then select the Bake setting. Press start. Run the cycle and once finished, check that the bread is done by inserting a skewer into the centre of the loaf. If it comes out clean, the loaf is cooked, if not, reset to Bake and bake for an additional 10 minutes or until ready.
Take the pan from the machine. Cool the loaf in the pan for 10 minutes, then cool completely on a wire rack.
