Bread Machine Panettone recipe

Fill the house with the smell of Christmas by making this fantastic Italian bread. Panettone makes a brilliant base to a bread pudding but it's just as good sliced, toasted and spread with butter.

Ingredients

  • 445g bread flour
  • 175ml water
  • 50g butter
  • 2 eggs
  • 1 1/2 tsp. vanilla extract
  • 2 tbsp. caster sugar
  • 2 tbsp. dried milk powder
  • 1 1/2 tsp. salt
  • 2 tsp. dried active yeast
  • 80g dried mixed fruit - including peel, apricots and soft fruits, finely chopped
  • 1/2 tsp. allspice (optional)

Directions

  1. Put the bread, water, butter, eggs, vanilla, sugar, milk powder, salt, yeast and allspice into the bread machine in the order recommended by the manufacturer.

  2. Add the fruit either at the end of the last kneading cycle or when the fruit/nut light or signal is given.

Let the panettone cool for at least 30 minutes if serving warm from the breadmaker. Recipe makes 1 loaf.
